Yes, quail is tiny and delicate, but the gamey bird soars with big flavors. The rich taste of the darker meat especially takes flight in Bold Food and Drink's Manchester Farms Stuffed Quail ($13), a Spanish spin on elegant chicken cordon bleu. Iberian serrano ham, buttery manchego cheese, herbs and Blackbird Baking Co. baguette get packed in the bone-in bird for a succulent combo that makes our taste buds flutter with delight.
