Black Beans and sweet potatoes have been a part of Taco Tontos’ DNA since its inception.

Not long after opening the Kent store in 1972 with a black bean and sweet potato burrito (a burrito that’s still available to this day), a black bean and sweet potato taco was added to the mix.

But it wasn’t until Taco Tontos created the two-layer tacos that this heavenly dish evolved into its final form. Instead of being housed in a single taco shell, this iteration has the ingredients swaddled between a hard-shell taco wrapped in a soft-shell tortilla. Patrons can choose between guacamole, sour cream or queso as their “glue” to connect the two.

While the outside might be different, the inside still tastes the same, with the black beans serving as the flavor canvas for the tasty chunks of sweet potato, sauteed onions and cilantro. Taco Tontos, which offers different fillings in the two-layer tacos, also has a plethora of toppings that can turn your tacos into a mountain of flavor.

“Not only is this taco healthy, but it’s a full meal within itself,” says Emma Lasko, a manager at the Kent location. “You don’t really realize how healthy it is until you’re done eating it.” 123 Franklin Ave., Kent, 330-677-0223; 13321 Madison Ave., Lakewood, 216-221-4479, tacotontos.com
