Shining a Light
Thank you for featuring us in your remodeling article (“Refresher Course,” January 2009). The Hurst Design-Build-Remodeling team was wonderful. I would also like to make sure proper credit is given to our decorator, Mark Simon. Our pendant lights were completely his creation, and he facilitated all of our light fixtures from Hinkley Lighting’s outlet store, Lights Out. We could have never reached such a beautiful conclusion without his great help.

Eating Cleveland
It was with great hope that I read the cover of your December 2008 issue. Classic Cleveland eats! Oh, happiness! At last, I would learn how to make Clark’s chicken croquettes with yellow gravy. I was sure my search was over. After all, what could be more of a Cleveland classic than that?

I know I’m not the only Clevelander who remembers what a treat they were. Twice a year, my mother would put on hat and gloves and take us downtown on the RTA to shop at Higbee’s for clothes and then have lunch at Clark’s.

When we returned to Cleveland after five years in the South, I couldn’t wait to take my children to Clark’s ... only it was closed. All gone. No more chicken croquets with yellow gravy.

I suppose by now my family is sick of hearing about the fabled dish. Maybe they think I made the whole thing up. You were to be my only proof. You have let me down. But there is still time — the recipe may yet appear in a future issue. I live in hope.

Editor’s Note: Clark’s chicken croquettes with yellow gravy never came up during our research of the dishes Clevelanders miss most, but all of this talk is making us hungry. We want to help. If anyone has any information on how to make this dish (original recipe or a reasonable facsimile of the original only, please), drop us a line at letters@clevelandmagazine.com.
