It’s one thing to keep a block of coagulating tofu in the walk-in cooler or slap a portobello mushroom on a bun for vegetarians. What’s happening at Lago is quite another. A veggie-heavy menu is the norm there, due to the kitchen’s northern Italian focus. But Mondays bring a special menu that features a raft of additional vegetarian options from appetizers to desserts. We savored aranchini (a Sicilian rice ball stuffed with artichoke hearts and red peppers) and feasted on the vegan risotto (there’s always at least one vegan dish on the veggie menu). “We’ve done a tofu meatball before,” says Nicole Salerno, wife of owner Fabio Salerno (who also owns Little Italy’s Gusto). “But we change it up all the time.” 2221 Professor Ave., Cleveland; (216) 344-0547; lagotremont.com
