Don’t get us wrong. We’re fans of fluffy waffles piled high, topped with whipped cream and maple syrup. It’s just that some days we’re craving something a little salty.
That’s why we’re fans of George Gazdick’s Hungry Bear Waffle Bar, a mobile pop-up experience that lets us have both. Customers can choose from three every day savory dishes: a braised short rib waffle ($12) topped with sharp white cheddar, shallots, sour cream and greens, a peppery chicken and waffles option ($12) that marries a breaded chicken breast with harissa, greens and a garlic aioli and a hearty turkey sausage gravy spin ($12) that comes with a fried egg and sage. Weekly specials (think hot chicken) and a make-your-own with 30 ingredient choices round out the menu.
“The idea behind savory waffles was mostly organic,” says Gazdick. “I just played with some flavors and found some bangers.” What’s common among the waffles are the style. Inspired by a trip to Belgium, Gazdick makes liege-style waffles, a small version with rounded edges and a thicker batter similar to brioche than the typical Belgian waffles we’re familiar with. “It’s got four pieces so you can break off it,” says Gazdick. “That’s not a very traditional shape for a liege-style waffle, but it’s good for sharing.” hungrybearfoods.com
