You'll never look at the store-bought trifecta of s'mores ingredients the same way after indulging in Olivia Rose Confections' interpretation of the campfire favorite. After offering a few customized creations at the Cleveland Flea, pastry chef Saidah Farrell spun off the build-your-own-s'mores ($2.50) concept into her own sweets spot that opened in June. The base begins with a house-made graham cracker, sugar cookie, cinnamon macaron or chocolate chip cookie. Then select a marshmallow flavor. We suggest seasonal offerings such as pumpkin spice, but vanilla, raspberry, lemon, chocolate and even ghost pepper chili flavors are on hand. Go classic with Hershey's chocolate sauce or lather your creation with lemon curd, vanilla pastry cream or salty caramel, before topping off with extras such as coconut, crispy bacon, chocolate, nuts or fruit. A quick torch produces a s'mores brulee. And Farrell is cooking up some more sweet surprises for fans. "I'm thinking about making a s'mores survival kit, with a tea candle and a tiny skewer so people can roast their own," she says. 16832 Chagrin Blvd., Shaker Heights, 216-245-7182, oliviaroseconfections.com
