Move over chili cheese fries. We’re doing a samba over Sabor Miami Cafe’s salchipapas ($9). This Peruvian street food classic covers thick-cut steak fries in melted mozzarella, fresh corn and a tangy mayo-ketchup blend seasoned with paprika and garlic powder. Cilantro leaves and homemade pico de gallo adorn the plate, and huge chunks of kielbasa give the Latin dish a local flavor. “This is a typical dish you would eat from people in Latin America who sell food out of their houses and garages,” says owner Mariela Paz. While the toppings stand out, Paz ups the french fry game by rubbing the spuds with sazon, a Spanish seasoning salt with hints of garlic, cumin and coriander. “I use sazon and adobo to add flavor,” she says. “It’s a Latin thing. We can’t eat it without it.” Whether shared with the table or gobbled as a decadent dinner, Paz’s salchipapas will leave you stuffed and satisfied. “I love homemade food,” she says.”I cook with my soul.”
