That might be “working with a brewery or other chefs to bring in people from the West Side to experience East Side restaurants
and spaces.”
TOOLS: In-house vertical Chinese smoker. “I inherited this magic box, and we smoke brisket, turkey and lox,” says Zappola, who took over the space that was previously a BBQ joint to open his modern take on a Jewish deli. “It’s like we throw some things in there and we set a timer and we check it every so often. It’s just so consistent and so flavored and seasoned at this point that everything turns out great.”
DISH TO TRY: The Lincoln Park is the most popular sandwich on the menu. Served on a Challah egg roll, the starring ingredient is chicken schnitzel (thin pounded chicken breast that is then fried), a sweet pickle salad and a hot sauce aioli.
