When they visit their son in Austin, Texas, the Esselstyns always eat at Casa de Luz, a macrobiotic restaurant. A favorite dish is the kale with walnut sauce, and at their request the cook happily shared the sauce recipe.
1/2 cup walnuts
1 clove garlic
1-2 tablespoons low-sodium tamari (a soybean-based sauce)
1/2 cup water or more depending on preference of thickness
The proportions of each ingredient can be adjusted to taste. Serve on all vegetables. It is also good on broccoli, cauliflower and Brussels sprouts.
