Best Of CLE: Sakana Sushi's Vegan Sushi

With a menu that has 16 vegan sushi varieties, you'll have to visit this Rocky River restaurant multiple times to truly experience the menu.

Vegans, get your roll on. New Rocky River restaurant Sakana Sushi does sushi well — even creating options for its large vegan sushi menu. It includes more than 16 varieties such as the V Rainbow roll ($13), which layers vegan tuna and vegan salmon, both made with vegetables and starch, with avocado and fusion delights such as the Popcorn Fu rolls ($13) made with tempura portobello mushrooms and popcorn-fried tofu.

The popular choice is the Vegan Cabo roll ($13), which packs a fiery punch with spicy tofu, jalapeno and vegan spicy mayo. The tofu undergoes 40 pounds of pressure for an hour to get it densely packed and textured. It’s then marinated in a mixture of Sriracha, gochujang and eel sauce, then baked six at a time in a toaster oven to ensure the flavor profiles come alive.
