Best Of CLE: Sweet Costo's Limited-Edition Themed Desserts

After becoming a full-time chef last year, West Side pastry chef Shelby Costo unveiled offerings that were timed with Swift's new releases.

As Taylor Swift would say, Shelby Costo is doing good and she’s on some new s---. The West Side pastry chef turned to baking and confection making full time during the pandemic to free up her creative spirit. Timed with the dreamy surprise releases of Taylor Swift’s Folklore and Evermore, Costo created a limited run of quick bite pastries inspired by tracks from each album. For the track “August,” Costo created a strawberry pretzel Jell-O salad to convey the bittersweet feeling of the end of summer.

“The feeling you get when you listen to the song is the same feeling you get when you eat the dessert that correlates,” says Costo. Her exclusive desserts aren’t stopping there. In November, Costo will debut her long-awaited zodiac line of sweets — think a goat cheese bomb for Aquarius or a floral lavender cream puff for Pisces. instagram.com/sweetcostocle
