If you couldn’t make it to the beach this summer, a fresh seafood taco can channel all the vacation vibes you’ve been craving. Transport yourself to a Mexican getaway at Taco Vago, a fast-casual Eastlake taqueria that promises nothing less than authentic flavor and true street cuisine.

Served in three flour tortillas, the el marinero or “sailor” taco is the catch of the day here. Tender crab meat is marinated in a chipotle sauce overnight then cooked on a flat-top grill and topped with sweet mango salsa, lettuce and shredded cheese.

Served with a side of poblano rice, the power punch of this dish is all in the flavorful combination of the spicy pepper sauce with the sweet freshness of the mango salsa.

“The goal of these tacos is to give the taste of being on a coastal vacation,” says owner Gerardo Leon. “We don’t add the chipotle marinade to any other taco we use.”

Plus, it’s right in line with Leon’s vision: in a sea of Tex-Mex style restaurants, Leon wanted to be on his own little island by offering a unique twist.
