Last year, Michael Ruhlman pulled back the culinary curtain with Ratio: The Simple Codes Behind the Craft of Everyday Cooking. Now comes the Ratio iPhone app ($4.99). Although it doesn’t replace the book, the slick program is loaded with 32 ratios — the building blocks of culinary staples ranging from dressings to desserts — and adjusts ingredient quantities so you can make as much or as little as you’d like. It may not be as fun as playing Bubble Spinner, but it’s a lot more useful.
