Sliced seasoned lamb and beef, grilled onions and tomatoes are piled with a side of soft pita triangles for a build-your-own sandwich feel in this deconstructed gyro platter at Niko's on Detroit. Instead of the traditional yogurt base, owner Niko Moulagianis uses a sour cream/yogurt combo to create a smoother texture and milder flavor in his accompanying garlic-cucumber tzatzki. It's just one way Moulagianis blends his grandmother's Greek recipes with modern Mediterranean fare.

Spinach Pie with Feta ... $2.25

Marinated in olive oil and lemon juice for a light taste, spinach is baked inside a fluffy house-made pita at Aladdin's Bakery. It's one of the modest on-the-go offerings, such as chicken shawarma, designed to showcase house-made pita, lawash and naan. "If you provide the bread, why not provide the food?" says owner Connie Nahra.
