While the holy trinity of melty cheese, flavorful sauce and chewy crust known as pizza didn't get its start in America, it's clearly a staple in our food-obsessed culture. Humble Wine Bar elevates those sacred ingredients with 10 Neapolitan-style creations prepared using house-made, hand-kneaded dough — a simple, authentic combination of just water, yeast and flour left to rise for 12 to 14 hours. Try the margherita ($14) topped with tomatoes, house-made mozzarella and basil that's grown in-house seasonally. But how the pie is cooked is just as important, says co-owner Mandi Bernot. The Lakewood restaurant uses a seasoned ceramic stone oven that heats to between 700 and 850 degrees — so hot it can crank out a pizza in two to three minutes. "The crust is crispy and chewy," she says. "You get a little char on the bottom that adds to the flavor."
