Since Adam Goldberg launched his “pandemic passion project” in Westport, Connecticut, PopUp Bagels has been on a tear. After its informal launch in 2020, the bagel brand has blossomed to roughly 60 stores in a dozen states.

That growth is thanks to a business model that utilizes centralized dough production sites, which distribute to franchisees who proof, boil and bake on-site throughout the day. That system ensures that bagels are served hot and fresh all day long. The bagels are smaller, softer and lighter than what we have come to know and expect of our traditional New York-style water bagels.

PopUp Bagels sells only whole bagels in packages of three, six, a dozen or 30. Available flavors are pared down to just five: plain, everything, poppy seed, salt and sesame. Customers cannot order a sliced, toasted bagel and a schmear, breakfast sandwich or any other custom variation. Those bagels do, however, include a side (or sides) of schmears that come in a rotating array of flavors such as plain, scallion, salted butter, hot honey butter and pumpkin butter.

The brand’s catchphrase, “grip, rip and dip,” succinctly illustrates the uncomplicated menu and manner behind the burgeoning bagel shop. PopUp Bagels stores are small and carryout only.

Ohio’s first PopUp Bagels (28879 Chagrin Blvd.) will open on Friday, October 23rd at Eton Chagrin Boulevard in Woodmere.
