Though Udupi Cafe specializes in southern Indian cuisine, chef Akilan Mariyappan says this curry stew — made from onion, tomatoes, spices and chickpeas — is one of the country's most popular dishes. Simmered for at least seven hours, it's served with batura, a pillowy fried bread as big as the plate. "Just rip it and dip into the chana masala," Mariyappan says. No utensils necessary: "I use my fingers," he laughs. "The spoon is usually for Americans or [special occasions]."
