Two local European powerhouses come together in one impressive dish.
Der Braumeister Restaurant, known for its authentic German schnitzel, Bavarian pretzels and potato pancakes, gets its sauerkraut pierogies ($6 for two) from the Slavic Village butcher shop Krusinski Finest Meat Products.
“These little old women make them by hand,” says head chef Linda Hoertz. “The ingredients that they put in them, along with the love that they put into them, comes out in the taste.”
Though the deep-fried appetizer comes with your choice of two of the following options — potato and cheddar, ricotta or sauerkraut — plus plenty of sauteed onions and sour cream, we tend to double up on the clever kraut creation. Its tangy, bold flavor pairs well with the restaurant’s heartier options.
“The outside is lightly crunchy and the sauerkraut is like a creamed sauerkraut, so the inside is creamy,” says Hoertz. 13046 Lorain Ave., Cleveland, 216-671-6220, derbrau.com
