If you’ve pulled up a stool at Bistro 83 in North Ridgeville over the past 13 years, chances are you’ve been greeted by Jeff Gresko. Since opening day, he has helped turn the restaurant into a neighborhood gathering place. Gresko makes it a point to learn guests’ names, remember their favorite drinks and genuinely get to know them.
“When we first started, the goal was to make it like Cheers,” he says. “Everybody knows your name. I think people appreciate that.”
That personal touch has helped create a loyal following. Gresko works to instill the same hospitality-first mindset in every member of Bistro 83’s bar team, emphasizing that great service is as important as a great pour.
“We’re always trying to create cocktails people don’t expect when they come into Bistro 83,” he says. Whether it’s a complicated custom request or one of the restaurant’s signature creations, Gresko is happy to take on the challenge. “If I have the ingredients, I’ll make it.”
