Owners Connie and Sean McConnell's traditional shepherd's pie starts with a beef shoulder clod the size of a piglet. Roasted overnight, the flavorful but economical cut is shredded and nestled with peas and carrots into fluffy mashed potatoes that line a rarebit casserole dish. More potatoes, shredded cheddar cheese and scallions top the pie, which is drizzled with a blend of roast juices and imported Irish gravy. "It's comforting and delicious when you get a spoon of the meat, peas, carrots, potatoes and gravy all at once," says Connie.
