For chef and owner Bryan Burnett, the curry goat is the standout at his restaurant for good reason. "In Jamaica most people raise their own goats and then cook every part, so curry goat is almost like a national dish," explains Burnett, an Antigua Bay native. He insists that his secret to a great curry goat is the seasoning — black pepper, garlic, fresh thyme and onions — along with his cooking technique. "I slow roast the goat for an hour and a half which makes all the difference," he explains.
