In Lebanon, the kibbie nayyeh or raw meat, is considered a delicacy to be shared. "We bring in the freshest-grade Ohio lamb filet," says Paul Chamoun, co-owner of Seasoned Brands, which operates Taza A Lebanese Grill, "and cut away the fatty marbling." The ground lamb tartare is blended with cracked wheat and spread on an appetizer plate. It is eaten with raw onion, fresh mint, olive oil, salt and pepper on a flat pita. "We don't need to spice the meat because it's so fresh," he says. "That's what makes it special."
