If you ask Cesar Mugaburu, he'll tell you that not all tamales are created equal. "Peruvian tamales are very unique," says the executive chef and Peruvian native. "It's all about the plantain leaves we use for our tamales. They create a distinct aroma and flavor that is native to Peru." The leaves are stuffed with fresh Peruvian corn, peppers, olives and eggs before getting rolled and steamed. Once it's time to serve, the leaves are unfurled and plated open-faced.
