Buss Up Shot, $10 | The Callaloo Cafe and Bar

You'll know when owner Kelvin Keli Cadiz is making the Buss Up Shot, because you'll smell the curry two blocks away. The plate of curried chicken, potatoes, chickpeas, sweet and sour tamarind sauce and roti, a Hindu flatbread, is an extension of his native Republic of Trinidad and Tobago, where Indians are the largest ethnic group. The dish's name means mashed up, because the roti is shredded immediately after it's grilled. "We have it as thin as possible so it melts in your mouth," Cadiz says.
