Within six months of moving here, John Suh realized Cleveland was missing two things: shaved snow and Asian-inspired food trucks. So along with his brother James, Suh started SnowBros Shavery. The brothers, who grew up eating a Korean shaved ice dessert called patbingsu, serve their own version ($5 & $6) in a traveling cargo trailer with a mission to make every day a snow day. To create flavors such as matcha green tea, the duo mixes milk with tea and quickly freezes it to create a dairy-infused ice block. Then it’s shaved into a feathery, ribbon-like design using a commercial ice shaver. “It’s very close to ice cream,” says Suh, “just thought of in a different way.” Tasty add-ons include mochi, seasonal fruit and condensed milk. But Suh loves pairing the taro shaved snow with almonds. “The sweetness is a little nuttier,” he says. “I tend to gravitate toward that one.” snowbrosshavery.co
