Why we love it: Inspired by owner Jason Workman’s grandmother, wings have become one of Butcher and the Brewer’s signature dishes. “We use whole wings in a multi-day, three-step process: first, a brine to lock in moisture and season the interior, then a smoke over applewood, and finally a finish in our ripping hot, coal-fired Josper oven,” Workman says. Try this: The wood-fired dry rub wings ($15) are coated in a brown sugar and spice blend, served over blue cheese and topped with house hot sauce and scallions for a smoky, spicy and tangy bite. 2043 E. 4th St., Cleveland, 216-331-0805, thebutcherandthebrewer.com
