Douglas Katz knows how to spice things up. After years of creating Indian, Moroccan and Thai dishes at his Shaker Square restaurant Fire Food & Drink, he developed a set of chutney-based recipes that worked really well together.
The condiment made with fruit or vegetables and plenty of spices comes in all kinds of variations from amba (a sweet, pickled mango version) to zhug (a spicy serrano pepper option). In June, Katz launched Chutney B, a fast-casual restaurant centered around bowls topped with rich, flavorful chutney, inside the Van Aken District’s food hall.
“We wanted to introduce people to some aspects of ethnic dishes that are approachable,” he says. All four options — Indian masala, Thai yellow curry, Moroccan harira and a rice noodle salad, are either vegan or vegetarian, but protein such as grass-fed meatballs, organic chicken and miso-glazed tofu can be added. “I like the meatballs with the Thai yellow curry,“ says Katz. “When you mix it all together, it’s just great.” 3441 Tuttle Road, Shaker Heights, 216-713-1002, chutneyb.com
