There’s just something absolutely divine about savoring a crisp, cream-filled pastry. Jamie Diviney created Holy Cannoli ($5 each or five for $20) out of her Orange Village home last year, in part, to try and master the technique of homemade cannoli after watching hours of YouTube instructional videos.
“It’s extremely labor intensive, but that’s what makes it a delicacy,” she says.
The dough goes through a five-step process in which sweet Marsala wine is combined with dough to create a bubbly, croissant-like texture. She deep-fries 20 shells at a time, making 200-300 shells per batch, and then creates each filling by hand.
Although you can find Diviney’s vanilla cannoli regularly at Tremont’s Affogato Cat Cafe, you can also catch her at events such as the Cleveland Flea where she pipes each shell with up to five different fillings per order, such as pistachio, salted caramel or mocha made with dark chocolate and espresso powders folded into either a ricotta cheese or almond cheese base.
