Then: We've always been a beer town. It's ingrained in our souls and brewed in our hearts. Platform Beer Co., which opened its small-batch brewery in 2014, tapped our love for witbiers and dark saisons with an ever-evolving and always-rotating mix of house beers. Now: Demand for its creative ales has led the Ohio City spot to expand to a 10-barrel brewing system and add four delivery vans. The brewery has also collaborated with CLE Clothing Co. on the New Cleveland Palesner and recently worked with Michael Symon on a Belgian beer for his B Spot restaurants. By the end of this year, owner Paul Benner will open Gypsy Brewing, a creative space for brewers. "It's taking risks, taking chances and really being a homebrew-inspired place," says Benner. "That's what experimentation on the homebrew level is all about."4125 Lorain Ave., Cleveland, 216-202-1386, platformbeerco.com
