House-made yucca, plantain, malanga or corn chips serve as the perfect utensil for your gourmet guacamole. "The idea is to give guests ownership over their guacamole, which is a lot of fun," says Joseph Tis, director of culinary operations. We recommend heating things up by adding spicy peppers — a blend of Hungarian wax peppers, red Fresnos and diced jalapenos, all dressed in a habanero puree — or a combo of earthy black beans and tangy goat cheese.
