You’ve got your DVR set to record all the upcoming fall series, but there’s another way to watch some must-see TV. Young’s Sushi in downtown Willoughby channels a Food Network vibe with a live stream of its sushi chef’s cutting board to a 27-inch Samsung flat-screen in the dining room. The low-key restaurant’s high-tech setup gives us a bird’s-eye view as chef and co-owner James Lee flashes his stellar knife skills — slicing through ingredients such as the avocado and tempura shrimp in Young’s popular crunch roll ($8) or tender lobster, crabmeat and avocado for the Young sushi roll ($15). We watch as Lee rolls the sushi in its nori paper and rice wrapper, then quickly slices it into pieces.
