There’s a delicious science experiment sitting behind the Terrestrial Brewing Co. bar. In an 11-inch-tall glass cylinder, vibrant variables are packed to the top of the futuristic tank and the results come served in a pint glass. This is the Battery Park brewery’s infusion tower, an inventive twist on craft beer-making that uses a different cocktail of ingredients to flash-infuse beers with unique flavors every two to three days. From the Bruh Lite Pilsner spiked with pineapple and star fruit ($3.50 for 9 ounces) to a Cocoa Wheats stout infused with Saucisson smoked pig bone ($6 for 16 ounces), the beers are creative combos dreamed up by the brew masters and bartenders, who will try anything once. “It’s kind of trial and error with what we found works and really doesn’t,” says co-owner Ralph Sgro. “This is just a top note of flavor and aroma that’s really unique.
