This summer he turns up the heat by using bold condiments and sides paired with lighter fare featuring seasonal fruits and vegetables. Korney, who likes to layer flavors and has a soft spot for all things Asian, showcases both with his excellent seared pepper-crusted bluefin tuna entree ($30).
