Since taking over as executive chef at Georgetown last October, Gregg Korney has brought some exciting and ambitious additions to the Lakewood restaurant's menu of upscale American favorites. This summer he turns up the heat by using bold condiments and sides paired with lighter fare featuring seasonal fruits and vegetables. Korney, who likes to layer flavors and has a soft spot for all things Asian, showcases both with his excellent seared pepper-crusted bluefin tuna entree ($30). Firm pink-centered slices of fish are plated with candied oranges, kimchee, pickled cucumbers and a smear of hot Sriracha sauce.
