Beer goes with everything. I mean, people have been doing this for thousands and thousands of years. But knowing what goes into [brewing] helps to pick out certain flavors. Kind of like a good chef can appreciate a meal, you kind of see different qualities in a beer: There's good yeast quality, good grain characters — you want to make sure you have the right balance. You can have roasted grains, caramelized grains. You can choose one [type of] hop for an entire beer, but by adding them in at different times, you're going to have different flavors. From that perspective, it's pretty fun.
