Don’t judge a soup by its color. The boldly hued borscht at Sterle’s Country House — part of its family-style dinner ($25) — has a Ukrainian twist thanks to chef Natasha Pogrebinsky’s heritage. To make the tomato-based soup, Pogrebinsky stews her vegetables — more cabbage than beets with tomatoes and carrots — for up to 90 minutes, resulting in a heartier, stocky consistency that’s earthy and comforting. Whatever the pigment, don’t let this unique dish scare you and don’t forget to top it off with a dollop of sour cream. 1401 E. 55th St., Cleveland, 216-881-4181, sterlescountryhouse.com
