The barbacoa, made from top-round beef, is seasoned with onions, garlic, salt, bay leaves and an adobo sauce made with dehydrated chipotle, guajillo and pulla peppers while sharing the pan with house-made corn or flour tortillas. As the meat sizzles, the excess fat provides a sweet and tangy taste of the beef and forms a frothy layer upon the taco shells, giving the taco a juicy and flavorful kick. Once cooked, these tacos are served with any choice of fresh vegetables or house-made tomatillo sauce on the side.
