Chorizo Arepa, $12 | Barroco
While Barroco's chorizo arepas are a cult craze here, the thick corn tortilla pockets have been a Colombian street food staple for generations. "We make the arepa using an ancient recipe," says owner and Colombia native Juan Vergara. "Each arepa is hand-formed from homely corn, and the process takes three days." This signature arepa is then stuffed with grilled spicy chorizo, seasoned onions and green peppers and finished with melted mozzarella. "Colombians use mozzarella a lot because it is so inexpensive," he says.
