While herring rarely makes an appearance on U.S. menus, the oily fish is celebrated in Russia and served by many on Christmas. "Herring was so readily available in Eastern Europe, it became part of the culture," explains manager Rusty Roark. "[It's] very similar to corn on the cob to Americans." The popular Pepper Pike haunt keeps the Russian tradition alive by marinating fresh Eastern European fish in olive oil, lemon juice and onions. The herring is then served cold with a side of warm potatoes.
