A nod to the Mediterranean city of Valencia and its land's seafood-forward cuisine, this dish is quite the catch. Sauteed onions and peppers meet sauteed shrimp, scallops, mussels, clams and a half lobster along with chicken, sausage, garlic, pepper, salt and a saffron broth. The rice casserole is served in a traditional two-handled metal paella pan that preserves moisture and texture. "You can smell the flavor through the vapors," says manager Emilio Nunez. "This paella is right up there with the paella we eat in Spain."
