Having your cake and eating it too just got a lot easier thanks to Lydia Dolsen. After her daughter was diagnosed with celiac disease at age 5, the Mentor native started making nut-based cheesecakes as a sweet treat. But when non-restricted eaters also fell for them, she knew she’d struck gold. “I was just making these cakes for parties, for my daughter’s birthday parties, for friends and everybody kept telling me, ‘These are amazing. You could be selling these,’ ” she says. So she listened, launching Nomaste Cakes two years ago. Made with cashews, walnuts, dates, coconut milk, coconut oil and maple syrup, the personal-sized desserts come in decadent flavors such as tiramisu, raspberry lemon and lavender love.
