So what's a Vietnamese banh mi sandwich doing on the brunch menu of an Italian restaurant in Moreland Hills? "That's a good question," says Flour chef Matthew Mytro, whose breakfast-heavy Sunday menu plays loosely with the Italian theme. "We took some classic, approachable brunch items and gave them some kind of Italian spin." Drawing inspiration from Saturday staff lunches at Superior Pho, Mytro's pork banh mi ($12) begins with house-made porchetta that undergoes a four-day process of brining, curing, drying, wrapping and waiting. Usually cut thick for dinner, the fatty, savory Italian pork gets sliced thin and subs as both the pate and pork loin in the Vietnamese favorite. Mytro then adds a touch of garlic aioli and a mix of lightly pickled carrots, cucumber, radish, jalapeno and red Fresno peppers between two slices of sourdough bread. "Why can't we do a banh mi?
