Most people grow up not liking Brussels sprouts, but Michael found a way to make them appetizing. These have a strong cabbage flavor, but the acidity of the capers in the sauce cuts through the pungent flavor of the sprouts. These are unique because they're not cooked to hell and back.
Tremont Tap House's Quang Truong on the chicken rosemary mac 'n' cheese, $17
It's a pretty simple combination of goat cheese and rosemary, which have a natural affinity for each other. The goat cheese has an earthy flavor to it and the rosemary is a really strong herb, so it balances the cream flavor very well. It brings back memories of begging for mac 'n' cheese when I was a kid. It's hot, creamy and rich — perfect for a cold day.
