Located in the Thwing Center, the 12-year-old college bar recently converted its basement into an in-house brewery that can produce up to 3,000 barrels a year. For owner Matt Vann and brewmaster Aaron Wirtz, it’s a study in creating a flavorful rotating craft beer list — think chocolate and caramel roasted oatmeal nitro stouts ($3.99 for 16 ounces) and a bright, refreshing grapefruit radler ($3.99 for 16 ounces). Homebrewers can score extra credit by taking the Jolly Scholar’s eight-hour brewing course, where you’ll create your own beer to be served on tap to your fellow classmates.
