The beans: Working at Stauf's Coffee Roasters in Columbus helped Brown form a simple roasting philosophy: Let the bean do its thing. Right now, Six Shooter is microroasting 7-pound batches of bright, fruity African and South American beans, which are currently in season. But as seasons change, so do Six Shooter's beans. "Coffee beans go in and out of season, like any crop. Our goal is to roast the bean in a way that accentuates its region," he says.
The cold brew: Don't worry beer drinkers, Six Shooter has something for you too. A nitro tap on the coffee bar spits out a highly caffeinated, nonalcoholic cold brew by Cleveland Height's 46 and 2 Brewing. It pours like Guinness and has a hoppy taste and aroma. "We're also working on a brewer's coffee with Platform Beer Co.," Brown says. "It's going to be the same concept but use malts and barley instead of hops."
The vibe: Little touches throughout Six Shooter reflect the neighborhood. Artists from the Article Design Studio on Waterloo's west end made the cafe's rustic bar and lamps. Its mugs and saucers come from Brick Ceramic and Design Studio next door. As Brown plans events for the summer, he's open to even more community collaboration.
