The full-flavored sauces, created by Joseph Brucato in the 1950s from family recipes, are built with extra-virgin olive oil and flecked with pecorino Romano cheese, a rarity in jarred sauces. The sweet variety is spiced with black pepper, while the spicy balances cayenne with parsley for a pleasant, humming heat.
