Yellow House Cheese’s sheep’s milk variety of blue ($26 per pound) has a more subdued tang and firmer texture than most dairy aisle varieties. “It has sharpness to it with a good earthy flavor,” says Yellow House owner Kevin Henslee. The delicious scent comes from a mold culture added to the milk as it turns into cheese. As the cheese ages, holes are poked in the rind to oxygenate the mold, which causes it to bloom in the crevasses.
