Brett Sawyer knows his burgers — B&G, Swensons Drive-In, Culver’s, A&W, Big Boy, Shake Shack and even McDonald’s have all graced his plate. So when the chef set out to create Good Company’s modern sports bar menu he knew there had to be a burger on it. “There’s a nostalgic feeling to [burgers] that people just connect with,” he says. He takes that emotional kinship to the next level with the Good Boi Burger ($8). Sawyer, who is also co-owner and co-chef of The Plum, grills two certified angus beef patties and tops them with white American cheese, griddled onions, lavender pickles and shredded romaine. The house-made poppy seed milk bun is the best part: uber-fluffy and smeared with creamy, house-made burger sauce that’s got the perfect balance of sweet and tangy. For some extra zing, dunk your burger in “red relish”: a mix of Thai chili sauce, ketchup and chopped green olives found in a squeeze bottle on every table. Each bite is full of well-researched inspiration, Sawyer says. “All the burgers we ate led to a conscious decision to take the things we liked best out of each one and put them onto one burger.” 1200 W. 76th St., Cleveland, 216-331-0318, goodcompanycle.com
