Cambodia
Bamh Cheiv, $6.75 | Phnom Penh
Originally based on a Vietnamese recipe, these price flour pancakes filled with shrimp, pork, carrots, mushrooms and bean sprouts have evolved into an authentic Cambodian street food. Bucking tradition, the restaurant forgoes the usual lettuce wrap and serves them as a knife-and-fork affair, topping the pancakes with more vegetables, peanuts and sweet garlic sauce. "Pancakes are sweet," says co-owner Jeannette Bun. "But this one is not too sweet."
