Use the spongy injera, an Ethiopian flatbread, to scoop pieces of chicken breast, hard-boiled egg, house-made cottage cheese, sweet caramelized shallots and berbere sauce, a spice blend of 14 herbs including cardamom, rue seed, ginger root and cloves. "The whole culture of daily life in Ethiopia goes into the process of making dorowat — from kids chasing the chickens to women gathering ingredients in the marketplace," says owner Carl Robson.
