From crisp daikon radish, carrot, shrimp, raw onion, peanuts, cilantro and a side of fish sauce, this salad is super-healthy and full of crunch — two common characteristics of Vietnamese cooking. Those curious wagon wheel-shaped slices known as lotus root add some positive vibes to the dish with a raw potato chomp. "In Vietnam, we eat a lot of it," says owner Camla Wadsworth. "They grow in the water, in the mud." The flower that sprouts above is the Buddhist symbol for good fortune.
